- 3 cups coleslaw mix
- 1/4 cup coarsely chopped fresh cilantro
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream
- 1 teaspoon lime juice
- 2 teaspoons Weber® Bold Chipotle
- Fish Tacos
- 6 tilapia fillets
- 5 to 6 teaspoons Weber® Bold Chipotle
- 12 (6-inch) corn tortillas
- 2 avocados, sliced
- Toppings: lime wedges, salsa, sour cream
Substitute any white fish in place of the tilapia to make these quick and easy fish tacos.
Preheat grill to medium heat; place grill pan on grates*.
Toss coleslaw mix and cilantro in a large bowl. Combine mayonnaise, sour cream, lime juice and 2 teaspoons seasoning in a small bowl. Add to coleslaw and mix until well coated. Refrigerate until ready to serve. Note: This can be made a day ahead, if desired.
Sprinkle one side of each tilapia fillet with approximately 1 teaspoon seasoning. To grill, place unseasoned side down on well oiled grill pan for 5 to 7 minutes, or until fish flakes easily. Do not turn.
Place half a piece of fish on a tortilla. Top with coleslaw, avocado slices and garnish as desired with lime wedges, sour cream and salsa.
*If no grill pan is available, simply place fish directly on grates.
